Let's take a look at this book..WHAT IS THIS LIKE?This cookbook has a variety of different recipes for vegan eating. I will break it down in sections to rate it.BEGINNING FOUNDATIONSThis section is excellent. It lays out how to understand the electric pressure cooker, how to use vegan ingredients in a pressure cooker, and basic pointers and fears about using pressure cookers. I also like the section where it lays out best and worst foods for electric pressure cookers.GRAINSThe grains section has a nice variety of recipes which feature a wide spectrum of grains from quinoa and rice to bulghur and the more exotic frekkeh. The ingredients are varied, not difficult to get and do keep the dishes full of flavor. You will have to adjust flavors at the end, however, as is the case with all pressure cooking. We have made quinoa and rice recipes. The flavors meld nicely and although the time sometimes needs some slight adjustments, it is pretty good.BEANS AND LEGUMESThis is a great chapter if you eat a lot of legumes/beans. There are recipes for highly spiced and flavored beans from Indian to Mexican. There is even a collard green recipe using black eyed peas as your protein. The wide variety of flavors in the recipes are invigorating. There is even a recipe for tofu which I have not used yet, but it is kind of odd how you would want to pressure cook tofu. It seems as if the tofu time in the pressure cooker is to force it to flavor up quickly which is a nice process. We have not made legume recipes as some of the family members can not have them.SOUPS STEWS AND CHILISThis is my favorite chapter. The chili in this is wonderful (although I had to leave the beans out and substitute with fried smoked sunflower seeds). The kale is a wonderful addition. All of the recipes in this chapter are loaded with flavor. They have a great combination of flavors and ingredients. There are also recipes in this section which require legumes. They are easily adapted to nuts or seeds though.PASTAThe pasta section is one we have not used yet as we don't have the pasta method down yet with the pressure cooker. The flavors vary from Italian to Asian in nature and there is a lot to choose from- despite it not being a huge section.VEGETABLESThe vegetable section is the one we use most. It is harvest time and we have a lot of choices to use in this section to use up our late summer harvest. Miso dressed Eggplant is fantastic. Maple Balsamic Parsnips have taken us to a new level of using parsnips up. We will be using that a lot this winter. It is really good. Spicy Sweet and Sour Kale and Kabocha Squash is a wonderful harvest recipes when the squash is available, and when it isn't, butternut can be a substitute which is easier to get in off seasons.HOLIDAYS/SOCIAL GATHERINGSThis section is great for parties- especially around Christmas. There are a lot of recipes you can use the pressure cooker for to make larger amounts for entertaining or family gatherings. In our case, our family will polish off one of these recipes in no time flat. We have some big eaters. The Baba Ghannoush and Camponata are delicious and I plan to use these a lot during Christmas and Thanksgiving. I LOVE this section.DESSERTSAlthough we probably won't be using our electric pressure cooker for many desserts, these are some great recipes. Cherry Vanilla Rice Pudding and Mango Coconut Custard are excellent for those who want recipes which make great use of non-dairy milks. The Cheesecake recipe using cashews is also fantastic. I plan to make that in the upcoming Christmas/Thanksgiving season several times.CHARTS AND INFOThere are charts and information sections in the back which vary from the cleanest foods and the most often sprayed and polluted, to water vs grain charts, and even places to make notes or build a permanent grocery list to keep on hand if you want to use this book a lot.THE BOTTOM LINEIf you are vegan and adventurous in food flavors and ingredients, this book is wonderful if you are able to eat legumes/beans. The recipes we have tried are delicious and we will probably use this a lot, especially during Christmas, Thanksgiving, and New Year. There are plenty of options to use your electric pressure cooker in ways that non-vegans will most likely not complain about.MY RATINGFIVE STARS. For a vegan pressure cooker book, this is really a good one. I like the variety of flavors and cooking styles in it and plan to use this often. The only difficulties would be not using legumes/beans due to family members who can not have them, but I will figure out substitutes.
